Lunch for $10 or less: Nalley Fresh

A salad with pulled chicken and vegetables at Nalley Fresh, a make-it-yourself cafe on the corner of Calvert and Baltimore streets.

Remember salads? You hardly ever see a good salad place open up these days. But I had a good one at Nalley Fresh — shredded chicken on a bed of spinach, with chickpeas, tomatoes, celery, cucumbers and a giardiniera (pickled vegetables), some mozzarella and a basil Dijon vinaigrette.

Nalley Fresh opened in March, and it's become a neighborhood favorite for the downtown office crowd, who line up to create their own rice bowls ($5.75), burrito wraps ($7.50) and salads ($8.30). Those prices include the addition of a basic protein, vegetables, homemade dressings and cheeses. You pick them out, and a counter crew prepares it.

Sound easy? It's not. Well, not the first time. The interface at Nalley Fresh can be confusing. You can add eight toppings to a salad, but it's hard to see all of your options before you start picking them out. It's really only a problem on your first visit, and the Nalley gang has learned to look out for customers with that deer-in-the-headlights stare — "First time?"

It's a good idea to go with a veteran on an initial visit. Or check out the Nalley Fresh website, where all of the options are laid out more coherently, or put in your lunch order in advance.

There's an upside to the helter-skelter at Nalley Fresh. It keeps the independently owned eatery from feeling corporate. The owner here is Greg Nalley, who gained a fan club at the Harvest Table, his Locust Point restaurant. Nalley Fresh seems to keeping the downtown lunch crowd happy and healthy. If you're starting a fitness regimen, or trying to keep to one, Nalley Fresh would help you to keep to it.

Nalley Fresh now serves a build-your-own healthful breakfast, too.

Other assets at Nalley Fresh include homemade frozen yogurt and outdoor tables, which are so popular that interlopers from other restaurants will sometimes commandeer them. There is indoor seating, but it's the kind where you end up feeling like you're in everyone else's way.

True, $8.30 sounds a little high for a salad, and there's a surcharge for some proteins, like shredded chicken ($1), jerk pork ($1) or grilled salmon ($3). But my salad lasted me two meals.

The downtown location has been such a hit that Nalley has decided to open a second location. Come September, Nalley Fresh will be opening on Schilling Circle in Hunt Valley. The new location will have seating for 70, Nalley said.

After 20 years in the culinary business, Greg Nalley has finally become what he calls an overnight success. Although his path has been anything but direct, Nalley currently oversees an expanding empire in the Baltimore area. His eighth Nalley Fresh restaurant just opened its doors in Columbia and strong demand for the unique salads, bowls and wraps that the burgeoning chain offers has inspired plans for further expansion. But it is unlikely that any of it would have happened if the life-changing news Nalley received in 2001 had not inspired him to take the leap and pursue his longtime dream of running his own restaurant.
"When I got that big dose of cancer, it brought a lot of things to light, a lot of things I was scared to do, like open my own place. I was fearful of that," Nalley said.

Soon after his diagnosis, Nalley opened his first restaurant in Tide Point called Harvest Table, a hit among the neighboring Under Armour community. Nalley later sold Harvest Table and began rescuing troubled restaurants through consulting and acquisitions. Then, the 54-year-old father of three came up with the idea for Nalley Fresh when he was with his kids. In 2011, Nalley opened his first Nalley Fresh restaurant on Baltimore Street by applying the customization aspect of restaurants like Chipotle to a more diverse and healthy food profile.

In 2012, Nalley opened his second location in Hunt Valley where he gained interest from Phil and Brad Hoag. Phil Hoag was the first Burger King franchisee in Maryland, and his son Brad followed in his footsteps as the first Qdoba franchisee in Maryland. Brad was looking for the next big thing to bring to Baltimore and was happy to find it in his backyard. Nalley says his partnership with the father-son duo has been fantastic for the company.

"We started holding hands and the next thing you know we're married and we're doing a little deal together," Nalley said. "His company is the one that I really attribute this big growth to — they bring that operating component that I don't have."

Nalley also credits the success of his restaurants to his 120 employees, whom he sees as partners. "You can have great food and a great atmosphere, but if your employee has a bad attitude, the customer might not come back," he said. Nalley is partnering with a local fitness center to develop a custom meal so members of the fitness center can order knowing it is approved by their trainer. He also hopes to forge other local partnerships to benefit his customers because, he said, "if customers are committed to us, we want to be committed to them."

Nalley Fresh has also added a customer loyalty program to reward customers who frequent the restaurant. When asked about the future growth of his company, Nalley smiles and says he has more dreams that he thinks could come to fruition. In five years, he envisions pursuing locations outside of Maryland and having a total of 15 to 20 stores. "I don't see any reason why Nalley Fresh can't be a viable player in the fast-casual market," Nalley said. Twenty years in a business where most new ventures fail might force some people to change professions. But even a late-stage cancer diagnosis didn't stop Greg Nalley from following his passion. "I look back and I wouldn't trade anything I've done for what I am right now," he said. "This is something that's a marathon, not a sprint. Now I'm at that 24th mile, I trudged in there, I didn't quit. And now I'm starting to see some fruits of that 20 years."

Love the app and the site. I had an issue where I signed up for an account online and got to use my google account. The app did not allow for Google sign in so I had to create another account. I used the same email and it seems to have linked but adding Google auth, etc would be helpful.


Everything is always fresh and tasty. My husband and I have been going to Nally Fresh in Owings Mills for over two years and we will miss the interaction with the staff. Even with our masks on they recognize us and always say hello.

Can’t get a refund through the app for missing orders.

Nalley did a BOGO night. Nalley couldn’t handle it. Waited over an hour before speaking to the manager who couldn’t even find my ticket or cancel my order for a refund. Thankfully I’m only out one meals worth of money 😂. He wrote his number on a paper bag and said to call him. Yeah, okay boomer. I’m just not gonna return. Quality here used to be so good, but as the company scaled, as with some many companies, it’s gone down the drain. In 2021 this is simply unacceptable.

Fresh nalley

They were friends. One of them is Sasha. He was not handsome in appearance, but with a good figure and impeccable taste. He always dressed well, in general he was dandy and the soul of the company. His intelligence and sense of humor I want to tell you the story of my fall.
